Advent 2017 :: Day 22

I first made this Cranberry Upside Down cake with the Cake Slice Bakers two years ago and declared it one of the best cakes I'd ever tasted despite being very simple. The only problem is that is must be made with fresh cranberries, which as anyone in the UK will tell you are only available here in December. It really does not work with frozen ones... the result is distinctly wet and soggy! (Don't ask how I know)

So it seemed a fitting cake to take to our annual book club Christmas party.

And should you feel the urge to be baking cakes just three days before Christmas or maybe you would like an alternative to Christmas pudding then you must try this. You won't regret it!

You can find my version of the recipe here:

  1. Yet another tempting recipe. Thank you for the warning regarding frozen cranberries though as I have several packs in the freezer and might have been tempted to use them. I would love to know what happened!

  2. That looks lovely. I wish we could get fresh cranberries apart from at Christmas, they have such a fabulous taste.

  3. Sounds delicious. Do you think it would work with blueberries (I guess I'm purely basing that on shape?!?)

    1. I wondered about using blueberries too, as I have just picked 6 Kg of them!

    2. You would need to reduce the sugar with blueberries I think.

  4. Mmm! I love cranberries. Your cake sounds delicious. It is a shame that cranberries are only available here for a few weeks before Christmas.

    1. I totally agree... especially when we can can just about everything else, but I suppose it makes them more special.

  6. Looks luscious but unfortunately we only get frozen cranberries here in North Queensland so I shan't be trying it! I am half way through making an ice cream Christmas cake as an alternative to traditional pud for Christmas Eve, but I also have the traditional one (still with coins and a very few trinkets) for Christmas day.

  7. Thank you for this recipe Gina! I was fortunate enough to attend the same party and can vouch for the glory of this cake. Got my fresh cranberries, so here goes!
