Kitchen Poetry : : Four

Spicy Pumpkin Muffins

10oz plain Flour
3 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
4oz caster sugar
12 fl oz pumpkin puree
(pumpkin flesh, simmered in water for 20 mins and then pureed with some of the cooking water)
1 large egg
3 fl oz vegetable oil
1 tablespoon runny honey
4 oz raisins

Mix together the flour, sugar, baking powder, salt and cinnamon in a large bowl. In a second bowl or large jug, whisk together the pumpkin puree, the egg, the oil and the honey. Stir the wet ingredients into the flour until just combined - lumpy batter is okay but there should be no visible flour. Stir in the raisins. Divide between 12 muffin cases and bake at 190 deg C for 20-25 minutes. They are cooked when the tops are brown and spring back when gently pressed.

Baked at 6.30 am this morning so still warm for breakfast.
This was poetry!

  1. Nice looking muffins and a very detailed recipe and instructions, helpful for some of us. I might have a go if I can find the time!
Jan's work in your last post looks fantastic. If mine turns out half as good I will be happy.

  2. I can smell them from here! Might have to try these. Yum!

  3. Wow such energy in a morning to be baking these beauties. :) Well done you.

  4. Yum! I wish I was at yours for breakfast!

  5. Gina, i'm all for getting up early, but 6.30?!!!!! they do look DEEEEEEElish though!!

  6. Great recipe Gina! I love muffins - especially for breakfast.

  7. I'm enjoying all your kitchen poetry. Keep it coming. And the textiles.

  8. Excuse me, you were baking at 6.30? I feel so lazy now. Yum, though!

  9. Those look lovely - perhaps I'll be able to scrape some good pumpkin innards out of the last remaining mutant pumpkin from the allotment!

Love the mug too - I gave it to my mum last year!

  12. Delicious! Don't wake me up at 6.30 though!

  13. Ah, see? I wondered how you managed to get so much stuff done, and now I know. You just never sleep.

Those muffins look delicious, but I have to say I'm a tad disappointed. After reading about your Kitchen Poetry pics I went dashing off trying to find the grime and dirt in your kitchen (just to make me feel a bit better about mine, obviously) AND THERE WAS NONE!! Please try harder next time.

Loving the pointy cuffs, by the way.

  14. They look lovely...and such a wonderful smell for the rest of the house to be woken up with!

  15. That is kitchen poetry allright. I had to stop myself salivating over the computer screen when I read this post!
