Leftovers

Well that's Christmas done and dusted for another year... and what a good one it has been. Fun times with family and friends, food, drink, laughter and games. I hope you've had good times too! The last of the family left this morning but the left overs carry on going...
 
 
Although I don't eat meat I do cook a turkey for everyone else and it is traditional that I bung absolutely everything that is left over under a puff pastry lid for a Boxing Day Pie. But this year I did something a little different... inspired by Paul Hollywood's Hand Raised Boxing Day Pie.

 
Separate layers of turkey, stuffing and cranberry sauce in a hot water crust... not entirely left overs though as I had to make more stuffing and more cranberry sauce to make the pie as we had used both up at our Christmas lunch.

 
Obviously I can't testify to what it tastes like but it is disappearing fast!

  1. Glad you had a good one Gina! We are more veggie than not so the 2 meat eaters had a turkey breast joint and got to take the leftovers home with them. Leftover 'pigs in blankets' went into the cats.

  4. I saw Paul Hollywood making that Gina. It did look very interesting and the traditional mould he used gave it a lovely shape too. I couldn't decide whether I liked the savoury and sweet mixture.

  8. Fantastic pie! That's a great idea for leftovers. I've just finished off our leftover Brie, singlehanded. Probably a mistake. Will I get nightmares?! And just when we could do with some "lean" days we're off to be fattened up by Mamgu.

  9. That's some pie - we had the remains of the turkey in plain shortcrust today, but I must say it went down well. Just a few pickings for the cat left.

  13. See, just as I suspected. Having spent Christmas Day slaving over a hot stove, you then do the same again on Boxing Day, including making pastry, AND cranberry sauce to make a pie you don't even eat. I've said it before, and I'll say it again - you ARE weird.

  15. Ooh, very Mrs Beeton! I've only once had a go at a hand raised pie (veggie version). Quite enjoyed the play doh effect but made the mistake of making in advance and freezing it. It took forever to defrost and was still rock hard in the middle when I served it.
