Advent :: Day four

On day four I give you a recipe...
This is a Paul Hollywood recipe and whilst the man may have fallen from my favour for his shenanigans, he does know how to bake a wonderful cheesy biscuit. Light, flaky melt in your mouth and so easy!

They don't look much but they taste wonderful and are the perfect accompaniment to drinks... I like mine with a glass of chilled Oloroso.

Cheesy Biscuits

75g plain flour
75g unsalted butter, cubed
75g Gruyere cheese, finely grated

Whizz together the flour and butter in a food processor until it looks like breadcrumbs. Add the cheese and continue to process until the mixture forms a ball. Wrap in clingfilm and chill for half hour.
Pre-heat oven to 200 deg C and line two baking sheets with non stick baking parchment. Roll the dough out to about 5mm thick and cut out circles with a 5 cm round biscuit cutter. (You should get about 24 biscuits.) Put the circles onto the baking sheets and leave them well spaced. Bake for 10 minutes (watch that they don't get too brown). Grind with salt and pepper while they are still warm and allow to cool.

Apparently they will keep for a few days in an airtight tin but I can't confirm that as they never last more than a few minutes in our house!

  1. They sound really scummy and I bet they fly off the plate. Thanks for sharing the recipe - it seems so simple and quick to make. You'll have to make some more for Christmas - probably 3 or 4 more batches!

  4. They look delicious Gina! I didn't know who Paul Hollywood was so I went to wikipedia. Naughty, Naughty -- it appears he's been hiding the salami in the wrong place!

  7. I too have copied the recipe to make later, and I doubt if mine will hide in a biscuit tin either! I love the crochet baubles from yesterday, but I have never learned to crochet so I will give that one a miss. Cheers

  9. These look just right, might have to have a go at them for Christmas. Our contribution to one of our children's Christmas dinners is cheese and biscuits and I've just been reunited with my 30 year old Moulinex food processor. Thank you for the recipe.

  10. I think I would cut out the rolling out step but making a log of the mixture in cling film and cutting off rounds at the required thickness.
