Hugh's veg book has come up trumps. I know I said I wouldn't be back until Monday but this was too good not to share.
Beetroot and walnut hummus with garlicky flatbreads and a tomato and herb salad.
Pretty much a perfect lunch for a sunny Sunday. Now I guess it's time to start cooking dinner.
I'll be back tomorrow with all the things that were promised!
I've not made the hummus but can second the vote for the amaaaaaazing flatbreads!

ReplyDeleteI have his book and did the potato & feta stuffed peppers after you posted your pictures. Wow - so easy and so tasty. I need to look through the book again and start trying some of the recipes. I have made his chickpea hummus and he's right - it freezes well.
