He's done it again

Hugh's veg book has come up trumps. I know I said I wouldn't be back until Monday but this was too good not to share.

Beetroot and walnut hummus with garlicky flatbreads and a tomato and herb salad.

Pretty much a perfect lunch for a sunny Sunday. Now I guess it's time to start cooking dinner.
I'll be back tomorrow with all the things that were promised!

  5. I have his book and did the potato & feta stuffed peppers after you posted your pictures. Wow - so easy and so tasty. I need to look through the book again and start trying some of the recipes. I have made his chickpea hummus and he's right - it freezes well.
