I am one of those people who cannot miss breakfast. I would almost go as far as saying it is my favourite meal of the day. It is usually just cereal or fruit and yoghurt... sometimes I might have a slice of toast and marmalade, but I rarely if ever miss it. So when Nancy posted about her quick and easy Granola I was intrigued... it sounded delicious and simple!
And indeed it was simple... just four ingredients.
Melt together 25g unsalted butter, 60g runny honey, 60g smooth peanut butter in a medium pan.
When melted stir into 300g rolled oats until thoroughly mixed. Spread out onto a lightly greased baking tray and bake at 180 deg C for just 15 minutes and allow to cool on the tray. You can find the original recipe from Jack Munroe, which suggests variations here.
It crisps up as it cools. When cold I mix in a handful of raisins and then store in an air tight jar.
I cannot tell you how good this is... so good I could eat it by the handful, although I prefer it with a splash of cold milk and some soft fruit. Which makes me feel very virtuous!
Although as I left the house at 6.15 am this morning to go for a swim there was a decided chill in the air and I was thinking I'll soon be back on the porridge.

Porridge for me! I make mine with milk in the microwave. 2 mins on 950W followed by 4 mins at 160W and then leave for quite a while. Sometimes I eat it almost cool, but it seems the better for it. My milk is also whole fat milk from the local farmer, I think that makes it even more delicious. I often make it before going out to our land that is about 5km away and then grab a bunch of berries straight off the bush, yesterdays was blueberries, raspberries and blackberries.

ReplyDeleteI eat breakfast sometimes, not every day, just when I feel like it. (The mister never ever misses it). I do enjoy granola, though, and have been known to make my own but that recipe does look easy and very delish.
ReplyDeleteAh, I saw that granola recipe and now we have a second opionion -- must be a keeper. It looks divine! I go in spurts -- eating the same thing for breakfast everyday for about a month and then I move on to the next thing. Now it's greek yogurt, mango, walnuts and honey. I'm thinking about moving on to some of those refrigerator oatmeal recipes that I've been seeing online. Have you tried them?

ReplyDeleteI always have breakfast and when it's really cold I have porridge, but otherwise it's a small amount of purchased granola with oat flakes and milk, and a piece of fruit. I used to make my own granola but it was not as simple as your version which sounds delicious. I shall have to try it. Thanks for sharing the recipe.

When I read Nancy's post I said to myself I must make granola and then I promptly forgot. Thanks for reminding me, I am going to make some this evening. I bet the kids will eat in a flash. I love breakfast and enjoy it once the children are at school. When working (hopefully again soon!) I take it with me if I can. x

ReplyDeleteI'm definitely a breakfast eater too! This week I seem to be on fruit, yogurt and muesli. My other favourite is poached egg on toast.

I do love breakfast, I think it's my favourite meal. When I was working it was often a bit rushed, but I always had to have something, if only toast and coffee. Now most days it's more leisurely, it's usually fruit (at the moment kiwifruit, as the NZ ones I like are in season), fruit juice, muesli, brioche (just rediscovered them!) with marmalade, and coffee. And in the summer, when it's warm enough and if I have time, what I like more than anything is having breakfast in the garden.

ReplyDeleteI'm like you, I need breakfast. I have oats - porridge in winter and oats soaked in cold milk in summer. Both with fruit and a spoonful of plain live yogurt.
ReplyDeleteOn holiday I choose granola as it's usually the closest thing to oats but it seems a bit too sweet. I've never made granola, maybe homemade would be less sweet - I'll have to experiment xx

yes, breakfasst cereal! But I make my own muesli. I started with grnaola, but too messy, too much work. I roast the oats and spices, then add coconut flakes, sunflower seeds, nuts and chopped dried fruit.

Bizarre, Bloglovin just turned up this post - which I hadn't read. Yes, I do eat breakfast and love my breakfasts. I have been eating oats soaked overnight in water with a squeeze of lemon, then a dollop of yogurt on top, but I've managed to wean child off factory floor sweepings aka boxed cereals so now we all have porridge, also soaked overnight. Child has teaspoon of Nutella, himself has honey and prunes, I leave out the honey and we all have banana! And a splash of milk.
