Before I left for my week at Missenden Abbey I left a note... "Please water the veg and pick/use the courgettes" Well, they picked the courgettes...
but this was what met me when I opened the fridge on Friday evening. I kid you not, I've not set up the photo... a packet of bacon, some cartons of orange juice... and 33 courgettes... nothing else!
So it's going to be courgettes every meal until they are all gone. On Friday we had Courgette and Lemon pasta (recipe from Emma... and now a firm family favourite)
Saute a chopped onion with some chopped rosemary in a little olive oil until soft. Add 3-4 sliced courgettes and fry for a further 3-4 minutes. Add the juice of a lemon and a small glass of white wine and simmer until courgettes are soft. Add a couple of tablespoons of creme fraiche and some grated parmesan and serve on linguine with extra parmesan sprinkled on top.
On Saturday it was courgette and rice filo pie from Hugh's Veg Everyday book. Very good served with beans from the garden too.
Tonight they've had a courgette curry...
And as a double whammy there was courgette and lime cake too!
Despite being alarmingly green it tastes rather wonderful... recipe can be found here.
(They are pistachios on the top... not chopped courgettes!)
There will be more... I plan to find a new courgette recipe everyday until they beg me to stop... that'll learn 'em!
Courgette heaven :) two of my family would run away at the speed of light! I love courgettes but I am not very imaginative with recipes. The cake is intriguing. Cx

Those recipes sound delicious. My husband got off light this year as my crop consisted of just one courgette! All the rest rotted and dropped off before reaching a pickable size.
ReplyDeleteHa ha ha! Well you did say pick/use and they clearly just decided to pick! I have a book called 'What Shall I Do With All Those Courgettes' that i bought when I had my allotment and rather underestimated the amount of courgettes one plant would produce!

ReplyDeleteI love every one of the uses you've already put those zucchini to so far, and would have gladly pulled a chair up to the table. I'd even have brought my own plate and cutlery! And wine, too.
I suspect that your garden has not ceased zucchine production, so keep those recipe ideas coming. I actually bought some of these lovely summer squash this afternoon at the farmers market (the smaller ones are my favorites.)
You've reminded me of my very first trip to London in the mid-1970's, with my then boyfriend, with whom I shared a Brooklyn brownstone apartment with garden access.
I was the only one in the house who had any interest in the garden, and had the landlady's complete okay to grow veg to accompany the flowers that she'd established there when she renovated and actually lived in the 1840's house.
Tomatoes green pepper, carrots, and zucchini, started from seeds were my chosen crops. The zucchini were still in their first harvesting when we left for London, giving a key to a friend, with instructions similar to yours to ... keep the garden watered, and help yourself to those tomatoes and zucchini.
Gina, I returned to very large zucchini, a few tomatoes, and great intentions to find my own recipes to use these treasures.
Know that I've rambled, but ... thought you'd understand.

Our courgettes have just not grown at all which I think must have been down to the soil in the bed we planted them in. It obviously does not have the oomph that yours has Gina. Mind you, I wouldn't know what to do with all that produce. I'm not that fond of them in truth but you seem to know what to do with them big time. I am mightily impressed. Loss of internet coverage means I am playing catch up so forgive the lack of comments on previous posts. It all reads like the usual whirlwind lifestyle so I see nothing changes!!

ReplyDeleteOh, this was such an amusing post! I will definitely try some of these recipes as they look so delicious. I was rather relieved that they were not chopped courgettes on the top of the cake!
ReplyDeleteWell, that's what happens when you plant zucchini and summer squash--you get a truckload. I love to make zucchini breads and store some in the freezer for those winter days, and I also make zucchini squares, which are really good.

ReplyDeleteI tried the courgette and lemon pasta and it was hideous - but then I didn't have any wine so I used a mixture of balsamic vinegar and water instead. Well, I thought it would work (ish) x
